Appliances of enzymes in the food industry

Enzymes are widely used by the food industry as processing aids for the production of numerous and common products such as:

  • dairy products: cheese, milk, yoghurt,
  • bakery products: bread, cookies,
  • meat,
  • drinks such as: fruit juice, beer and wine.

Commercial production of enzymes started in Europe, in the middle of the 20th century. Since then the use of enzymes in different commercial applications has not stopped growing.
